Our new recipe this month is one of the most peculiar, tasty and sought-after Italian dishes, easy to cook and inspiring, especially for those of you who intend to visit our country in Winter.

Ladies and gentlemen, meet our chicory and rice soup.

Christmas holidays are well over and many of us have already started a detoxing diet after food marathons… and with so many Italian dishes to choose, especially at Christmas, the need to get back in shape is more than justified!

Chicory is one of the vegetables more suited to reach this target: it’s particularly rich in minerals, such as calcium, phosphorus, sodium, magnesium, iron and selenium. It’s one of the best detox , as it stimulates the liver function and frees your body from toxins.

Chicory, both raw and cooked, is excellent many recipes. This month, we at QDC Wedding have chosen one of the Italian dishes to during cold Winter evenings: the chicory and rice soup.

  • Chicory, 20 ounces, washed and ground
  • Water, 0.30 gallons
  • Garlic
  • Celery
  • One carrot
  • Chili Pepper (optional)
  • Oil
  • Salt
  • Parmesan Cheese
  • Rice, 7 ounces

Here’s how to cook one of the most appreciated simple, but sought-after.


Put oil, garlic, diced celery and a carrot, and chili pepper in a bowl and let them brown.

Add chicory and leave it to flavour for a couple of minutes, then boil it in pre-heated water, add salt and cook for around thirty minutes.

Add rice and cook it based on package’s instructions.

Serve with plenty of Parmesan cheese.
